Pancetta is seasoned, salt-cured meat and the cut is from pork belly. This being the underside of the pig. Ideal for those pasta dishes.
GUANCIALE
Guanciale is an Italian cured meat product from free-range Mangalista pork, jowl or cheeks. Ideal for wrapping around those chicken breasts or asparagus.
COPPA
Coppa is an Italian cured meat product which is a collection of muscles that is an extension of the loin that runs through the shoulder. Being in the shoulder it has fat and it is a muscle that gets lots of exercise, resulting in more flavour. This has been cured in juniper berries. Ideal for antipasti dishes.
NOIX DE JAMBON
Noix de Jambon means “Nut of Ham” and is a favourite French charcuterie plate sliced finely across the face of the muscle of the shoulder. Ideal for antipasti dishes.

The Salamis are cured in three different flavours and these are Garlic, Fennel and Chilli. Ideal for antipasti dishes.
